DescriptionThe fodder coming from the fertile ground of the Asiago upland and the traditional production processes are the 2 elements making this cheese a great success in the Italian gastronomy. Produced since the year 1000, at first with ovine milk but since 1500 only with cow milk, it received in 1978 the exclusive denomination of origin. The working includes complex phases like milk skimming, a preparation of the rennet and of the paste and a rest in proper rooms, called warehouses, with a cellar temperature. The fresh quality, aged for a maximum of 40 days, is among the most used and esteemed.
