Description| Paillard's La Réserve Privée is an exclsive wine, with only a few bottles produced, vinified only with Chardonnay grapes from the famous "Côte de Blancs". According to the year?s requirements, 20-25% reserve wine is used. For this Champagne Paillard uses methods from the past: when bottling, before the second fermentation, they add less yeast than usual, therefore bottles withstands a pressure of only 5 kg. This type of fermentation allows the Chardonnay to express its mineral qualities, its refinement, elegance and freshness. Peck recommends storing it carefully without sudden cooling in refrigerators. It is particularly suited for serving as an aperitif of with fish courses.
