| Peck's cotechino (Italian sausage) is, together with its zampone (stuffed pig?s trotter), the finest Italian pan-boiled meats. It is sold fresh, and vacuum packed, which allows it to be stored in the fridge for up to one month. Cooking instructions: place the cotechino in a pan of cold water and bring to the boil (the water must just bubble) then simmer for around two and a half hours.
