Peck's Wine Cellar has so many prestigious spirits on sale and the Capovilla spirits just had to be included. The Capovilla spirits are characterised by their constant search for rare and old varieties of fruit, which are now nearly impossible to find, and offer a fascinating range of aromas. After a scrupulous fermentation phases, Capovilla distils its products using bain-marie processes in small alembics, and leaves them to age for 12-24 months before bottling them so they can develop the most amazing organoleptic qualities. Peck recommends serving this product at 15°C, the ideal temperature to allow the spirit to express its strength and complexity.
