Wine Sessions - Vincent Girardin

Vincent Girardin represents the eleventh generation of a winegrowing family native to the Burgundy region.
Vincent started his business in 1980, aged only 19 and with just two hectares that he inherited, gradually integrating other land plots after his father’s retirement. His ambition to produce wines in total autonomy has always been accompanied by his passion and his respect for his vineyards.
The quality of the Maison has been immediately recognized by the big wine connoisseurs as it perfectly expresses the supreme grandeur of the terroir; this fact let the company to concentrate on the great red and white wines from the Côte de Beaune.
After a period of experimenting with various production techniques, Vincent Girardin developed his personal philosophy centered on the connection to the territory and suited to purity: the cultivation of vineyards is biological, only supported by organic manures coming from the farms in Burgundy, and the grape harvest is done manually. The whole winemaking process follows the lunar calendar and the ageing occurs in French oak barrels to let the win hold all its characteristics.
The techniques that Vincent Girardin sharpened are globally recognized and praised by connoisseurs and winemakers from all around the world.

During the dinner you will taste the following wines:
