Fontina, with the denomination of origin since 1955, is obtained from cow milk transformed into cheese within 2 hours from the milking. The shape is cylinder with a diameter of 30-45 cm, a height of 10 cm and a weight between 8 and 18 kg. When cutting it the paste is elastic, soft with hardly any ocellation, it melts in your mouth and it tastes sweet and aromatic at the same time. The particular maturation process of this cheese, kept on red-deal boards for a period ranging between 3 and 6 months, takes place in rooms at low temperatures and it helps give this dairy product a unique taste. The washing and salting operations go on until the cheese is ready to leave the maturation cellars.
