""Girolle"" cheese tool
Description
According to the tradition handed down by the monks of Belleley, the Tęte de Moine cheese should be shaved with the blade of a knife placed horizontally to the surface and rotated so that the thin slivers of cheese curl up like rosettes.
This procedure requires a certain skill but can be made easier by using a Girolle® - a special utensil invented for the purpose in 1981 by Nicolas Crevoisier, a precision engineer from Lajoux in the Jura Canton. The original Girolle® is made of a wooden base and a pivot with a steel knife attached to it.
The top rind of the Tęte de Moine cheese form should be removed and then the cheese should be speared onto the centre of the Girolle®.
The rosettes are formed by simply turning a handle which makes the knife rotate over the surface of the cheese.
The best results are obtained when the Tęte de Moine has just been taken out of the fridge.
