Careful selection, washing and crushing of the olives with stone grinders, the pressing and the cold centrifugation help to enhance the flavour and fragrance of the oil that is limpid or slightly cloudy, green with golden reflections, with a distinct perfume of olives with herbal notes. Affiorato Galantino is fruity, with an after-taste of artichokes and almonds.
