The ‘colomba’ is a dove-shaped cake which is naturally yeast-risen like the panettone. The texture is delicate and is perfumed with candied orange peel. The cake is covered in a thick icing flavoured with almonds (a type of amaretto almond) and with whole almonds for decoration.
As is always the case, it is the quality of the ingredients which makes the difference. Peck’s colomba is made according to artisans’ standards and with the customary attention to excellence - in so doing, it respects a tradition which has stood the test of time.
Right from the start the colomba has always been a sweet, rich bread, full of goodness but also full of symbolic meaning - as is often the case with the traditional, feast-day desserts.
It was a dove that flew back to Noah, after the flood, with an olive branch in its beak and which then became the symbol of the divine spirit, peace, rebirth and love.
Legends abound as to the origins of the dove as an Easter cake and they are intertwined with the medieval tales of the warlike exploits of King Alboino or Frederick Barbarossa.
There’s no evidence to dispute the fact that celebratory breads in the shape of a dove were indeed offered as a symbol of peace to those military leaders. However, more realistically you have to admit that it was a great business idea that the Motta company had at the beginning of the 1900s, so as to spread the custom of the colomba Easter cake.
