The Capovilla spirits are characterised by their constant search for rare and old varieties of fruit, which are now nearly impossible to find, and offer a fascinating range of aromas. After a scrupulous fermentation phases, Capovilla distils its products using bain-marie processes in small alembics, and leaves them to age for 12-24 months before bottling them so they can develop the most amazing organoleptic qualities.
