DescriptionIn the area north east of Lemano, in Switzerland, on the border with French Switzerland, the king of Swiss cheeses was born. Ivory -coloured with hard paste, Gruyere has small and round holes and a natural hard crust, with a dark colour. To produce a single shape it takes nearly 400 litres of raw milk, which is carefully checked in its genuineness by federal inspectors, aiming at the monitoring of healthy cheeses. During the ageing process the shape is often wetted with salted pure water creating in this way an oily layer that modifies and accelerates the ageing of the cheese. The taste is sober and bodied, ideal to be tasted on its own; to respect the organoleptic characteristics it is better to cut it with a metal wire or a double - handled knife.
