Son of the oldest farmers' tradition, Guanciale is a swine product, which does not stop satisfying the most refined and demanding connoisseurs thanks to its inimitable taste and scent, to its morbidity and versatility in the kitchen. Guanciale is taken from a whole swine meat piece, placed between the throat and the cheek of the animal, from which it is called after (in Italian cheek = guancia). Ideal to be tasted on its own, this salami is also perfect for the preparation of pasta ""all'amatriciana"", but it suits elegantly also fish. |
