Peck’s Sauvignon 2006 has a typically strong perfume, reminiscent of yellow flowers, sage, mint and peppers, mixed with fruity peach and apricot notes.
It is a white wine with a good structure and acidity. It is perfect as a pre-dinner drink or to accompany spicy first courses, thick soups and broths, medium-matured cheeses and raw ham.
It should be served at 8-10° C.
The grapes for this elegant Sauvignon come from the Saint Quirino area, in Pordenone province. They are grown at 120-150 metres above sea-level, on a calcareous gravelly plateau of alluvial soil.
After a careful, manual harvesting and a low-pressure, compressed-air pressing, fermentation is in a stainless steel tank, at a controlled temperature of 14-16°C.
About 7 months after the harvest, the Sauvignon Peck is bottled and left for a further month of ageing in the bottle before being sold.
