The grapes needed to produce Peck’s Vin Santo come from selections of age-old grapes from Trebbiano, Malvasia and San Colombano which are grown on the hills in the province of Florence. The healthiest and ripest bunches of grapes are picked by hand, then they are left to dry on straw mats in well-ventilated sheds which were built for the purpose in centuries gone by. On the occasion of the festival of the patron saint of Pieve di Campoli, Saint Stephen, the by now dried grapes are pressed and the resulting must is hermetically sealed in oak casks for at least four years.Before they are released for sale, the bottles have to be blessed at the “Santa Maria dei Fiori” cathedral in Florence - in accordance with a centuries’ old tradition.The golden, yellow-amber and slightly opaque colour and its typical and decisive flavour make Vin Santo a classic dessert wine which is especially good with biscuits and pastries or the traditional cantuccini biscuits from Prato; however, the intense, full and elegant aroma and the harmonious, soft and velvety flavour make it suitable for more innovative combinations such as with some mature and piquant cheeses. Peck’s Vin Santo is 5% alcohol by volume; the recommended temperature for serving with desserts is 18°C and slightly cooler (12°C) for serving with other dishes.
