Description

Antinori's finest wines occupy a most important place in Peck's wine cellar. Cervaro della Sala is made from 85% Chardonnay and 15% Grechetto. The varieties are vinified separately and the must is then transferred to new French oak barriques for the alcoholic fermentation phase; after around 6 months during which the malolactic fermentation is completed, Cervaro della Sala is then ready to be bottled. The bottles rest for a further ten months in the historical wine cellars at Castello della Sala. Cervaro della Sala was produced for the very first time in 1985 and since then has been constantly acknowledged as an out standing and exceptional white wine. Peck recommends this wine its fine intense perfume (aromatic notes of citrus fruits, pineapple, pear and acacia flower) and its full, persistent and mineral flavour.
