DescriptionThis pecorino, the pearl of Siena, is an authentic firstling of taste. Produced by hand with raw milk, e.g. non-pasteurised, it is processed according to an old recipe dating back to a 1000 years or so. Its handmade shapes are covered with sea salt after the rennet has been wisely pressed. Its ageing is forecasted between 60 and 150 days on deal boards where pecorino is rolled at least once a week in order to naturally enhance the strongest tastes.
