DescriptionProduced only in Sicily it has a denomination of origin since 1955. The processing still takes place with craft techniques using whole sheep milk and lamb rennet. The typical twisted design of the surface is due to the cane moulding in which the dairy mass is compressed. During the preparation grains of black pepper are added giving ""majorchino"" (as named locally) a unique spicy and aromatic taste. The diameter is 35 cm, the height 15 cm and the weight reaches 12 kg. The maturation process takes at least 6 months at cellar temperature, a period during which the cheese is regularly rubbed with salt.
