Obtained through the boiling of the whey, ricotta is laid to dry on wood for at least 24 hours, salted and then put in woven baskets for about a week, when it is constantly turned by hand to facilitate the hardening. Its ageing period can vary from 2 to 12 months, completing the production process and bringing to your table a tasty and light cheese, ideal to be tasted natural, yet perfect also for complex courses, from pizza to high cuisine courses. You have to taste it; it is an example of great Italian dairy tradition.
