ca del boscoThis wine is certainly the most “classic” Franciacorta among Ca’ del Bosco’s vintage wines – with that kind of taste which in some ways reminds us of the great wines from the other side of the Alps.
Franciacorta Brut Millesimato docg has been produced since 1978 and can be considered a touchstone for all others in its category.
It is golden yellow in colour with a fine perlage; its perfume is rich and refined at the same time; it has an elegant, soft taste, but it is also structured and long-lasting. This combination of characteristics makes it an excellent sparkling wine for the aperitif but it is also capable of accompanying most of the rest of the meal
After the initial fermentation, the base wines rest for 8 months in steel, temperature-controlled vats, until the preparation of the cuvée (Chardonnay 50%, Pinot Bianco 20% and Pinot Nero 30%) which is the result of a skilful blend of wine kept both in steel vats and refined “en pièces” (in small oak casks). This specific procedure gives the finished product an unmistakable personality which is further strengthened by being refined in the bottle, in underground cellars at a constant temperature of 12°C.
The wine rests on the lees for a minimum of 41 months and it is only disgorged in small quantities, to fulfil customer orders.
