Maldon is one of the oldest towns in the County of Essex, in the United Kingdom, and has been a most important and busy sea port since Medieval times. The legends relate that the secret of producing salt was discovered during the Roman invasion of Great Britain, but the increase in production came after 1700 and the ancient salt plant, which still exists, was built in 1823. Maldon salt is produced thanks to the particularly dry climate conditions in this area. The water is filtered and left to deposit, it is then evaporated in cisterns; during the evaporation of the sea water, the salt crystals start to form on the surface, creating small hollow pyramid shaped masses. It is the structure of the Maldon crystals that makes this salt so unique. When the salts thicken, they fall to the bottom of the cisterns, where they are hand collected and left to dry before packaging. Maldon salt is very fragile and the slivers crumble easily; it has a marked flavour and is ideal for seasoning foods. This Maldon smoked salt is totally natural and delicately aromatic. Peck recommends using this excellent seasoning on fish dishes, molluscs, sauces, marinades or sprinkled over grilled meat and chicken for a very special touch.
