But since the XVI century, through the progressive replacement of ovine breeding with the bovine one, the Asiago cheese has been born as we know it today and as it is still produced today in its different ageing typologies in the respect of the traditional working techniques. The semi - aged Asiago has a slightly spicy and aromatic taste, which is perfectly combined with the consistence of the compact and granuled paste. Aged at a cellar temperature for 3 months this Asiago is an authentic king of the table and can be tasted on its own, accompanied by a nice red wine or used in the kitchen.
