Description
This Sardinian tasty and typical cheese has the denomination of origin since 1974.
It is still produced by shepherds with whole goat milk.
The processing takes place in small factories, in respect to the traditional methods and of the maturation process in cellars of Central Sardinia.
This cheese, with a diameter of 15-25 cm and a weight of 3.5 kg, is characterized by cambered corners, the paste is hard and compact, white or yellow-coloured.
The spice of the esteemed taste depends on the stage of maturation which can last from 2 to 8 months.
The Sardinian Flower is an optimal grating cheese and Peck, with a guarantee of its genuineness, recommends it also at the end of the meal.
