Description
With a denomination of origin since 1955 this cheese is produced exclusively in some provinces in Lazio, Tuscany and Sardinia.

It is obtained from whole ovine milk, coming from Sardinian original goats, and from lamb rennet.
It has the shape of a cylinder with a height between 14 and 22 cm and with a maximum diameter of 30 cm.
The weight reaches 20 kg, the crust is smooth and brown due to scrubbing and coverage with fat and amber earth.
The maturation takes at least 8 months at a cellar temperature and the constant salting gives the white paste of pecorino romano a spicy, salted, strongly aromatic taste, making it an esteemed grating cheese to be also enjoyed as tasting.
