DescriptionCalled in this way in the occasion of the canton exposition of 1909, this cheese is till produced in several parts of Switzerland with cow's milk and without the addition of dyes. The soft paste is gold-coloured, whereas the crust varies from brown to reddish; it melts easily becoming deliciously creamy. The typical raclette comes from the mountains of Vallese, where it is produced with cow's raw or whole milk. The taste is sweet but it becomes tastier when aged. This cheese carries one of the 68 names of origin printed on its crust (e.g. Anniviers, Bagnes, Gornser, Haudères): these regions are also its production areas.
