It is produced in the whole territory of the Cuneo area and, if processed in mountain areas at an altitude over 800/900 m.
and transformed on site, it can then boast the additional denomination ""mountain"".
The square one has a more delicate taste, whereas the round one is more salted and scented and it has more possibilities of maturation.
The paste is rather consistent and elastic and it has small little ivory-white holes spread irregularly.
