Description
Felino is a small village on the hills of the Parma valley and it has become famous for the production of the homonymous salami, which has been produced and distributed for 2 centuries.
The salami Felino suggested by Peck is prepared by using pure pork meat carefully selected, natural bowel and pepper in grains, following the traditional recipe dating back to 1200, according to some historians.
The mincing of the meat is coarse and mixed with ground pepper and garlic melted in dry white wine; its manual binding and ageing, lasting between 60 and 70 days, prevent the salami from being acid.
The sweet and delicate taste do not reflect the typical tastes of the salami industrially produced, thanks to the quality of raw materials and to the use of precious fat materials.
