Peck's Pralines

Peck's pralines represent a modern approach to enjoying chocolate. First of all the shape: simple elongated cubes, sprinkled with shining colours or encrusted like an artist's canvas with the ingredients encased inside. At first glance they resemble tiles of a mosaic which promises infinite goodness imprisoned (but not for long!) in a fragile and beautiful armour-plating. Each bite of these little jewels of cocoa - and only two bites are needed for you never to forget their flavour - represents an aromatic journey that enthrals the imagination and tempts the palate. Dark, white and milk chocolate and pure cocoa are produced from highly-prized ingredients, which are made all the more precious by skilled workmanship at the delicate tempering stage - a difficult technique which consists of heating and cooling the chocolate several times to obtain the perfect consistency. Once the casing has been broken the filling is never monotonous; rough, like grains of cocoa beans, creamy like a fruit purée or fresh like a candied fruit. Even the ganaches, always present in a selection of classic pralines, have a modern twist: they lose any excessive butteriness to be enriched by easily recognizable flavours.
