Produced at first only in Southern Italy and now also in Lombardy with great success it has processing techniques similar to the ones applied to sweet provolone.
The salty and spicy taste is due to the use of kid or lamb rennet instead of calf, plus an ageing process at cellar temperature varying from 6 to 12 months.
It is cylinder-shaped with slices and it is tied up with cords or nylon nets.
