The cheese is cylinder-shaped, it presents a sliced surface due to the net of cord it is tied up with.
The weight varies between 500 grams and 10 Kg, but some cheeses reach a weight of 100 Kg.
For the production of sweet cheese cow's whole milk is used added with calf rennet; the ageing lasts no longer than 3 months at cellar temperature.
