Description
In the abbey of Moggio Udinese, edified among green pastures of the massif Montasio, the monks created in 1200 this esteemed cheese of Friuli.
The branded shapes protected by a consortium are still produced through ancient working procedures, starting from the milk processing, which must be rich in dry and dairy substance, put to rest, skimmed, warmed and then left in copper boilers.
The paste obtained is wrapped in linen cloths and poured in the shapes, where -after being pressed and after removing the whey - it is salted by hand and finally aged.
The ageing phase is very important because Montasio is able to change its taste according to the maturation length of time.
Fresh Montasio is aged for not more than 120 days and stands out for its delicate taste of milk and the bodied light yellow paste, fondant with a few holes.
Exceptional at lunch and at the end of a meal.
